The newest collections from the singer were put "on hold" by the company after her death last month at the age of 27.
Winehouse's father Mitch said: "When Fred Perry came to us to ask what we would like to do with the new collection it was natural to continue. Amy loved working on both collections, and would want them to be made available.
"All the money we make and the donation that Fred Perry will give will go straight into the Amy Winehouse Foundation, which we are setting up to help children and young people in her name."
Fred Perry added: "After much consideration and with the blessing of Amy's family we have decided to release the aw11 Amy Winehouse for Fred Perry collection.
"Amy was passionate about the collaboration before she died last month. Amy was passionate and dedicated to the collaboration and her signature style is clearly stamped across each piece.
"In such circumstances the usual royalties and feels from the collection will be donated to the soon-to-be established Amy Winehouse Foundation."
Items from the Official Amy Winehouse Paper Dolls collection are available from the Fred Perry website now.
Proceeds from Winehouse's duet with Tony Bennett will also be donated to the charity.
